I can’t believe I haven’t thought of publishing this recipe sooner! Apple & cinnamon is probably THE best autumnal combo of all time, along with pumpkin & sage (in my opinion, of course).
This recipe if a good way to make the most of apple season and is the perfect accompaniment to your cuppa. What more? It’s easy and quick to make. You can also make it gluten-free, should you wish to.
Apple & Cinnamon Scones
- 1 chia egg (1 tbs ground chia with 3 tbs water)
- 3/4 cup oat milk (soy milk works well too)
- 2 cups unbleached all-purpose flour
- 1 tbs baking powder
- 1/4 cups coconut sugar
- 1/2 tsp salt
- 6 tbs vegan butter (or coconut oil, not in the liquid form, room temperature
- 1 tsp vanilla extract
- 1 1/2 tsp ground cinnamon
- 1 apple
Preheat oven at 400 degrees F.
Prepare chia egg in a bowl (by combining 1 tbs of chia along with 3 tbs of room temperature water). Once well combined, add oat milk to it. Set aside
In a separate bowl, combine all dry ingredients
Prepare the apple by removing the core (and peeling it if you want, but it isn't necessary). Chop 3/4 of the apple into small cubes and cut the remaining 1/4 into 6 thin slices
Add vegan butter (or coconut oito dry ingredients and combine well with a fork until only a few small bits remain
Stir the chia mixture once again and add it to the dry ingredients gradually, while stirring with a spoon. Add apple cubes and vanilla extract and mix with your hands
On a floured countertop, turn out and knead briefly to obtain a smooth ball of dough about 1 inch tall
With a knife, cut the dough into 6 parts and transfer them all to a baking tray lined with parchment paper
Top each of the 6 scones with an apple slice and sprinkle with ground cinnamon
Bake for approximately 25-28 minutes, until golden and well cooked inside
