In my corner of the world, the leaves are almost all gone and the temperature has dropped quite a lot. This means more squashes and more soups, right? Well, that’s certainly the case in my house. However, squashes are not only good in soups… They also make the best side dishes as you will find out with this “5 ingredients only” recipe.
- 1 butternut squash medium size, cut into cubes (about 1/2 inch)
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1 tbsp pumpkin spice or 1/3 tbs cinnamon + 1/3 tbs nutmeg + 1/3 tbs ground ginger
- 1/2 tsp salt
Preheat oven at 425 degrees F.
In a bowl, toss and mix together all the ingredients.
Toss squash onto 2 separate baking trays (or a very large one) layered with parchemin paper and cook for about 30 minutes, until tender.
Once tender, switch to broil for about 2 minutes, until nicely browned.
Remove from oven ans serve.
You can use pretty much any other types of squash but the cooking times may vary
