There are many things I LOVE about Autumn… Delicious apples is definitely one of them. This usually results in me buying way too many, which pushes me into creating yummy dishes. This time, I opted for a hearty breakfast, although my husband claims it’s a dessert. That’s a good sign, right?
This oat recipe is:

- Gluten free (if gluten free oats are chosen)
- Breakfast AND dessert
Baked Apple Oatmeal
- 2 1/3 cups oats
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp pumpkin spice or 1 1/2 tsp cinnamon and 1/2 tsp nutmeg
- 2 chia eggs 2 tbsp ground chia with 6 tbsp water
- 2 cups oat milk
- 1/4 cup coconut oil melted
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 2 apples peeled and cored, diced (about 1/2 inch)
- 1 apple sliced for topping
- 3/4 cups chopped walnut
- Brown sugar for topping optional
Preheat oven at 325 degrees F and grease a 9 x 9-inch oven dish
Prepare your chia eggs: 2 tbsp of ground chia seeds with 6 tbsp of water. Set aside.
In a bowl, combine together the oats, baking powder, pumpkin spice (or cinnamon and nutmeg) and salt
In a separate bowl, whisk together the chia eggs, oat milk, coconut oil, maple syrup and vanilla
Add dry ingredients to the wet ones and mix well. Add the diced apples and walnut and mix again.
Transfer mixture into the baking dish. Place apple slices on top of mixture and top with brown sugar (optional).
Place in oven and bake for 45 minutes.
It's delicious both warm and cold and can be kept in the refrigerator for 5 days.
