It’s apple season at last! Even though apples are usually available all year around, there is something about apples that were just picked up. The smell is amazing and they’re so delicious!
As I had some very ripe bananas at home along with a very big bag of apple, I decided to mix both together and came up with the most perfect bread.
It’s super easy to make and you don’t even need a mixer! How’s that? 😉
Give it a try and let me know what you think!
Banana & Apple Bread
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cup sugar I used coconut sugar
- 1 tsp ground cinnamon
- 2 chia eggs
- 2/3 cup vegetable oil
- 3 tbsp oat milk I used Earth's Own
- 2 large very ripe bananas, mashed
- 1 large apple, chopped
- 1 cup walnut, crushed
Preheat oven to 350 degrees F
Prepare your chia eggs: combine together 2 tbsp of ground chia seeds and 6 tbsp of water. Set aside for 5 minutes.
Line a loaf pan with parchment paper and set aside.
In a large bowl, mix together the flour, baking soda, salt, sugar and cinnamon.
Blend in the chia eggs, oil and milk.
Stir in banana, apple and walnuts and mix everything until well combined.
Bake for 1 hour or until toothpick test comes out clean. I suggest you start looking at around 50 minutes as all ovens are different.
