There usually is a silver lining to all dire situations… During this worldwide lockdown, I try to focus on the positive. I have more time to spend with my dogs and my husband. I have more time to read, catch up on my shows. I have more time to open the windows and take a deep breath while listening to how quite and peaceful it is outside right now. And, as a blogger, it also means I have more time to bake! The proof is in these “as delicious as they look” berry scones, which can be made using ingredients you more than likely have on hands. The berries can be replaced by any frozen fruits you may have… Or even fresh ones, such as blueberries.
Quick and easy to make, they are also a fun activity to do with the kids!

- 1 chia egg 1 tbsp ground chia with 3 tbs water
- 3/4 cup + 3 tbsp oat milk
- 2 cups unbleached all-purpose flour
- 1 tbsp baking powder
- 1/4 cups coconut sugar
- 1/2 tsp salt
- 6 tbsp vegan butter or coconut oil room temperature (not liquid)
- 1 tbsp ground cinnamon
- 1/4 cup quick oats
- 1/3 cup frozen berries
Preheat oven at 400 degrees F.
Prepare chia egg in a bowl (by combining 1 tbs of chia along with 3 tbs of room temperature water). Once well combined, add soy milk to it. Set aside.
In a separate bowl, combine all dry ingredients.
Add vegan butter (or coconut oil) to dry ingredients and combine well with a fork until only a few small bits remain.
Stir the chia mixture once again and add it to the dry ingredients gradually, while stirring with a spoon.
On a floured countertop, turn out and knead briefly to obtain a smooth ball of dough about 1 inch tall.
Top with the frozen berries, spreading them evenly.
With a knife, cut the dough into 6 parts and transfer them all to a baking tray lined with parchment paper.
Bake for approximately 25 minutes, until golden and well cooked inside.
