Are you nuts about nuts like me? As part of a balanced diet, nuts are the perfect snack: they contain unsaturated fatty acids, are good for your heart and have filled with many other nutrients. What’s not to like?
When the festive time of the year comes around, I love to up my game and make candied versions as a little treat. There are many recipes around to praline them the “proper” (and long) way but as I don’t always want to get my candy thermometer out, I came up with this quick, easy and just as tasty version. It takes maximum 5 minutes to prepare and 8-10 minutes to roast.

- 1 cup raw and unsalted nuts I used a mixed nuts
- 1/2 tbsp vegan butter
- 2 tbsp maple syrup
- 1 1/2 tbsp maple sugar (or coconut / brown sugar)
- 1/2 tsp vanilla extract
- 1 pinch cinnamon
Preheat oven at 375 and spread nuts on a baking tray lined with parchment paper
Put nuts in the oven for 2-3 minutes
While nuts are in the oven, combine all other ingredients in a bowl, except 1/2 tbsp of maple sugar.
Remove nuts from the oven (but keep the parchment paper on the tray) and add them to the mixture. Mix until the butter has melted and all nuts are well covered
Place nuts back on the lined tray, making sure to use all the maple mixture
Place back in oven and bake for approximately 8-10 minutes. You will see the maple mixture hardening and the nuts will turn golden
Remove from oven and sprinkle the 1/2 tbsp of maple sugar on top
Keep an eye on the nuts while they are in the oven as baking time may vary based on your oven... You don't want them to burn!
