Caramelized Carrot Soup – Soupe aux Carottes Caramélisées

As it’s not yet too warm for soup, I thought I’d share this one with you. If you’re like me and buy pounds of carrots but always end up wondering what you could cook with them, this recipe is perfect. Quick to make and bursting with flavours, it’s the perfect starter to serve your guests or the perfect main meal to serve with fresh bread and/or crackers.

For 4 portions

Ingredients:

  • 12 carrots, peeled and cut in cubes
  • 2 small onions
  • 2 tbs vegetable oil
  • 1 tsp baking soda
  • 1 tsp brown sugar
  • 1 tsp dairy-free margarine
  • 2 cups vegetable broth
  • 1 tsp curry powder
  • 1 tsp coriander

Preparation:

  1. In a soup pot over medium heat, warm oil together with the margarine.
  2. Add in carrots and onions and cook for 2-3 minutes.
  3. Add in baking soda and brown sugar and stir well.
  4. Cover and cook for 10 minutes or until carrots have caramelized (surrounded by their own juice).
  5. Add in vegetable brother, curry powder and coriander and bring to a boil.
  6. Simmer for 10 minutes or until carrots are tender.
  7. Transfer half the soup in a blender and blend until smooth before incorporating it back to the soup pot. Stir well and serve.

Puisqu’il ne fait pas encore trop chaud pour manger une soupe chaude, j’ai pensé partager celle-ci avec vous. Si vous êtes comme moi et acheter des livres de carottes et être en manqué d’inspiration quant à la façon de les cuisiner, cette recette est pour vous! Rapide à préparer et pleine de saveurs, elle est parfaite comme entrée ou encore comme plat principal avec du bon pain frais et/ou des craquelins.

Pour 4 portions

Ingrédients:

  • 12 carottes, pelées et coupées en dés
  • 2 petits oignons
  • 2 tbs huile végétale
  • 1 tsp bicarbonate de soda
  • 1 tsp sucre brun
  • 1 tsp margarine végétalienne
  • 2 tasses bouillon de légumes
  • 1 tsp poudre de cari
  • 1 tsp coriandre

Préparation:

  1. Dans un chaudron et à feu moyen, faire chauffer l’huile et la margarine.
  2. Ajouter les carottes et les oignons et faire cuire 2-3 minutes.
  3. Ajouter le bicarbonate de soda et le sucre brun et bien remuer.
  4. Couvrir et faire cuire 10 minutes ou jusqu’à ce que les carottes soit caramélisées (entourées de leur jus).
  5. Ajouter le bouillon de légumes, la poudre de cari et la coriandre et amener à ébullition.
  6. Mijoter 10 minutes ou jusqu’à ce que les carottes soient tendres.
  7. Transférer la moitié de la soupe dans un mélangeur et mélanger jusqu’à ce que ce soit lisse avant de retransférer dans le chaudron. Mélanger et servir.
