Summer might be here at last but with the skies getting grey and promising a well needed thunderstorm, baking cookies is what I wanted to do. These chocolate-walnut delights are perfect to dip in a nice cuppa while reading a book!
- 2 ¼ cups unbleached flour
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp pumpkin powder or cinnamon
- ½ cup chocolate chips
- ½ cup walnuts crushed
- ¾ cup raw sugar
- ½ cup canola or vegetable oil
- 1 tsp vanilla extract
- ½ cup soy milk or any non-dairy milk of your choice
Preheat oven at 350 degrees F.
Mix flour, baking powder, pumpkin powder (or cinnamon), salt, choco chips and walnuts together in a bowl.
Make a well in the center and set aside.
In a separate bowl, whisk together sugar, oil, vanilla extract and soy milk.
Pour wet ingredients into the well of the dry ingredients and mix well until all combined.
Spoon the dough onto a cookie sheet
Bake for 14-18 minutes, until slightly golden. Do not over bake as they’ll harden while cooling.
