With the holiday season just around the corner, I just love creating new recipes that can be served to family and friends when they visit. I am one of those people who feel the Christmas magic right on November 1st, so I’m usually singing and dancing along while cooking/baking (sorry Andrew!).
This recipe is as easy as they get and only requires 6 ingredients. I can’t believe that it took me 20 months of blogging on Kate & Zest to share it with you… Especially as it’s one of Andrew’s favourite treat!
Here it is!
Cruelty-free Rocky Road
- 1 cup vegan dark chocolate chips
- 1/4 cup natural peanut butter or nut-free butter if allergies
- 3/4 cup chopped vegan marshmallows I use Dandies
- 1 tbsp dried cranberries
- 1/4 cup pecans, broken
- 1/2 tsp ground cinnamon
Using a double boiler, melt the chocolate
Once the chocolate is melted, add in the peanut butter and stir until smooth
Set the chocolate mixture aside to cool
While the chocolate is cooling, chopped your marshmallows, break your pecans and set aside
Once the chocolate mixture is cool (very important or your mashmallows will melt), stir in the pecans, marshmallows, cranberries and cinnamon
Transfer into a small dish (loaf style), lined with parchment paper
Place in refrigerator until hard (approximately 30-45 minutes)
Once hard, remove for the dish and break with your fingers (my favorite way as I like uneven pieces) or cut into squares
