I know how much you like quick and easy recipes… Or maybe it’s just that I do. 😉 Either way, I am certain you will enjoy these granola clusters! They’re the perfect little treat, dessert and breakfast. Yes! Even breakfast when you top them with your favourite non-dairy milk. So yummy!
I made these using my favourite granola: Grandma Emily. They’re low in sugar, vegan, low sodium and absolutely delicious! They even have gluten-free granola that are just as tasty!
Now, for the recipe:
- 1/2 cup vegan chocolate chips
- 1/4 cup peanut butter
- 1 tsp vanilla extract
- 1/2 tsp cinnamon powder
- 1 1/2 cups granola
Using a water bath, melt the chocolate chips until smooth (approxiately 3 minutes) and remove from heat
(if you prefer using a microwave, heat on high for 30 seconds. If not smmoth by then, heat for another 15 seconds)
Stir in the peanut butter and mix until smooth
Add in the vanilla, cinnamon and granol. Carefully stir until all the granola is covered
Press the mixture intol molds (I used a silicon ice cube trey as it's easier to pup them out once ready)
Refrigerate for 30 minutes and enjoy!
You can keep them in the refrigerator for 3-4 days
