As much as I like going to a coffee shop and enjoying a nice iced latte with my husband, I also really enjoy making it at home.
Working in finance, I hear all sort of things… One that really makes me think is the fact that my generation, the millennials, is spending more money on coffee than on retirement savings. Pretty scary! So… Save around $5 per person next time by making this tasty and very easy recipe at home!
- 4 cups of brewed coffee
- 2 cups coconut milk or any dairy free milk of your choice
- 1 tsp vanilla extract
- 1/2 tsp almond extract optional
- 2 tsp maple syrup or more, to taste
- Ice about 20 cubes, depending on the size of the glasses you use
Brew 4 cups of coffee and let it cool on the counter until it's cold enough to transfer to the refrigerator/freezer. Add the vanilla extract and refrigerate overnight or place in freezer until cold (approximately 30 minutes)
Fill both glasses with ice, all the way to the rim
Add 1 tsp of maple syrup per glass
Pour coffee into the glasses until it's half full. (or add more for a stronger version)
Pour coconut milk (or milk of your choicuntil glasses are full. (or add less for a stronger version)
Add a few drops of almond extract (optionaand stir well
Serve immediately and enjoy!
