Yet another maple recipe! I can’t really help it as it’s maple season here in Canada, which means it’s pretty much everywhere. I am definitely NOT complaining though as I am a true lover of everything maple.
These maple roasted greens are the perfect sides to your meal and are even delicious cold. Very quick to prepare, they will make your house smell so good while cooking! Chester and Paddington were pretty much licking the air… Just saying. 😉
Maple Roasted Greens
- 2 cups brussel sprouts Cut in half (stem and bad leave removed)
- 12 asparagus Sliced (approximately 1 1/2 inches)
- 3 mini red onions Thinly sliced
- 1/4 cup olive oil
- 1/2 tsp sea salt
- 1/4 tsp fresh pepper
- 1/4 cup maple syrup
Preheat oven at 375 degrees F.
Tossed the Brussel sprouts, asparagus, red onions in a bowl with olive oil, sea salt and pepper.
Once all covered in oil, spread on a baking dish or tray (single layer).
Bake for 30 minutes, stirring halfway.
Stir in the maple syrup and bake a further 10-15 minutes until vegetables are tender and golden. The time really depends on the size of your Brussel sprouts, so keep a close eye.
