Another very easy and perfect dessert for summer, which requires no baking whatsoever. We’re going through a heat wave here in Canada (33 degrees Celsius today) and as I’m not prepared to stop myself from eating dessert if I want to, I do my best to come up with quick and cold options.

No-bake Cookies
Prep Time 15 minutes
Servings 8 cookies
Ingredients
- 1 cup cashews
- 1 cup almond meal
- 1/4 cup chocolate chips
- 5 fresh dates if dry, soak in warm water for 10 minutes
- 1 tbsp maple sugar or sugar of your choice
- 1 tsp vanilla extract
- 1/4 tsp cinnamon powder
- 1/4 tsp sea salt
Instructions

In your food processor, combine all the ingredients until you get a cookie dough (don't over process or it will turn into a nut butter)

Using your hands, shape into cookies of the shape and size of your preference.

Put in the freezer for 30 minutes and keep in the refrigerator afterwards.
Totally loving no-bake cookies during this heat. What a perfect sounding treat =)
They’re so quick to make! It can be a problem though as they are very addictive… You’ve been warned! 😉
Hi! Is it possible change the almond meal for Brazilian nut meal?
I have never tried and in fact, I have never used (or seen) Brazil nut flour. However, I assume the consistency is about the same, so I don’t see why not! If you do try, please let me know as I’m quite curious!
