This is another quick and easy recipe, which requires no baking. These little bites of goodness are perfect for snacking during the day at home, school or work. Warning: if you take them to work, make sure you hide them well… They disappear fast!
No-Bake Energy Bites
- 1 cup pitted dates if they’re dried ones, soaked them in luke warm water for 10 minutes and drain well
- 2 tbsp peanut butter
- 1 tbsp almond butter
- 1/4 cup dark chocolate broken in little pieces
- 2 tbsp chia seeds
- 1 tbsp hemp seeds
- 1/3 cup rolled oats
- 1/3 cup quinoa flakes
In a blender or food processor, pulse the dates until they are in small pieces.
Add the remaining ingredients and blend well. You can also mix in a bowl if you prefer.
Using your hands, roll into balls (approximately 1 inch).
Put in the refrigerator for 15 minutes (or eat right away if you’re too eager)
- You can use peanut butter or almond butter only, as long as you have a total of 3 tbs.
- You can use only rolled oats or quinoa flakes, as long as you have a total of 2/3 cup.
You can keep them in the fridge for up to a week. Enjoy!
