We’re still having very hot weather at the moment and while I’m dreaming of Autumn (yes, I’m an Autumn girl through and through), I’m going to make the most of the last few weeks of Summer and avoid turning my oven on as much as possible.
These no bake granola cookies are the perfect snack, dessert and, why not, breakfast. I mean, there’s granola in it so it’s breakfast, right?
No Bake Granola Cookies
- 1/2 cup coconut oil
- 1/2 cup smooth peanut butter
- 3 tbsp maple syrup
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon powder
- 1 cup quinoa flakes can be replaced with rolled oats
- 3/4 cup granola of your choice I use Grandma Emily
- 1 handful Graham cracker crumbs for topping (optional)
In a saucepan over medium heat, melt together the coconut oil, peanut butter and maple syrup (approximately 5-7 minutes, depending how solid your coconut oil is)
Add in cocoa powder, vanilla and cinnamon and simmer until all well combines (approximately 2 minutes)
Remove from heat and add in oat and granola
On a parchment paper lined cooking sheet, spoon mixture in 10-12 cookie shapes. Adjust the shape with your fingers.
Top with graham cracker crumbs if using
Refrigerate 30-60 minutes before serving. Can be kept in the refrigerator for 3-4 days.
