It’s cookie time! Even better: it’s oatmeal and raisin cookies!
I wanted to come up with a cookie recipe that could be enjoyed throughout the day. After all, there’s not much I like more than a nice cookie with my morning cuppa, serving me as breakfast! This means I tried to limit the sugar and oil to keep them as healthy as possible.
Should you wish to do so, you can replace the raisins with cranberries and it’s just as yummy.
Oatmeal Raisin Cookies
- 2 cups oats
- 1 1/4 cups flour
- 1/2 cup brown sugar
- 3/4 cup raisins
- 1/2 cup walnuts, crushed
- 1/2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup vegetable oil
- 3/4 cup oat milk
Preheat oven to 350 degrees F
In a large bowl, combine all dry ingredients
Add in the vegetale oil and oat milk and mix well with a spoon
Using a spoon, scoop the mixture and place on a lined baking tray flattening slightly until you get circles that are approximately 2 inches in diameter (you will have enough for 12 cookies)
Bake for 13-15 minutes, until golden
