We’re now well into September and my favourite time of year is just around the corner. I have been dreaming of it since early August, so I’m very excited it’s finally almost here! Over the past few weeks I have been experimenting with new pumpkin recipes to add more to the blog… And came up with these little delights!
I have always loved the combination “squash and nuts”. I feel they really boost each other’s flavour! Do you agree?

Pumpkin Pecan Muffins
- 1 3/4 cup unbleached flour
- 1 cup coconut sugar
- 1 tbsp baking powder
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup pumpkin puree
- 2 tsp vanilla
- 1/2 cup oat milk
- 1/2 cup vegetable oil
- 1/4 cup crushed pecans + handful for topping
- Brown sugar for topping
Preheat oven at 375 degrees F
In a medium size bowl, combine flour, sugar, baking powder, pumpkin pie spice.
Stir in pumpkin puree, vanilla, milk, oil and 1/4 cup crushed pecans and mix well with a spoon.
Line a muffin tray and fill each about 3/4 full.
Top with the rest of crushed pecans and brown sugar.
Bake for 18-20 minutes and enjoy!
