After a terrible summer, it seems that the warm weather has decided to show itself in September. This results in temperatures of 38 degrees Celsius on September 24! In this heat, I unfortunately have to stay away from my favorite autumnal recipes and have to try to find ways to incorporate Fall into this Summer weather. This is how I ended up with the super easy to make and flavourful pumpkin vinaigrette. The perfect addition to your salads while tasting like Autumn!
- 1/4 cup pumpkin puree
- 1/4 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 2 tbsp water
- 1 tbsp fresh sage chopped
- 2 tbsp maple syrup
- 1/2 tsp pumpkin spice or 1/3 tsp cinnamon + 1/3 tsp nutmeg + 1/3 tsp ground ginger
- 1/2 tsp salt
- 1 clove garlic minced
Mix all the ingredients together and enjoy!
**Can be kept in the refrigerator for up to 5 days
