Brownies is always a winning recipe in my house. As my husband loves them so much, I always try to experiment with different versions (mint, double chocolate, etc). This time, my goal was to create an healthier version (which means less sugar) and I wanted them to be raw. I can now honestly say that they’re the best brownies I have ever made and they will make a regular appearance in my kitchen! They’re also quick and super easy to make, which is what I always love sharing with you guys.
Raw Fudgy Brownies
- 1/2 cup pecans
- 1/2 cup walnuts
- 2 cups medjool dates soaked in warm water for 10 minutes
- 1 1/4 cups natural peanut butter or any nut/nut-free butter
- 2 TBSP maple syrup
- 6 TBSP cacao
- 2 tsp vanilla extract
- 2 TBSP coconut oil
- 2 TBSP chocolate chips
Place all the ingredients (except chocolate chips) in a food processor and process until all combined
Fold in chocolate chips and mix with a spoon
Transfer to a cake tin (I use 9" x 6"), spread equally and place in freezer for 1 hour before transferring to refrigerator
Slice and serve
Can be kept in the refrigerator for at least 7 days.
