I can’t believe it took me this long to share this recipe with you guys! I first made it quite a few years ago, when we still lived in the UK and somehow never thought of putting it on the blog. Now that I have fixed this oversight, I can work on convincing you to bake some. It is actually a lot easier that most people think and will only take about 10 minutes of your time, some chilling time and and less than 15 minutes to bake.
As Christmas is just around the corner, I decided to top them with some green sugar but it’s obviously entirely optional.
- 170 g vegan margarine
- 85 g coconut sugar or caster sugar
- 200 g plain flour
- 1-2 tsp orange zest
- icing sugar to top optional
Using a spoon (I like to use a wooden spoon), combine the margarine and sugar together
Stir in the flour and mix it all together until combines, using your hands
Halve the dough, roll each half into a log about 2 inches thick and wrap into cling film (think of using a green option for this, such as reusable sheets). Place in refrigerator and chill for at least 1 hour, more if you can
Heat the oven to 350 degrees F and line a baking tray with parchment paper.
Slice the logs into rounds. about 1/2 inch thick. Transfer to the lined baking tray and bake for 12-14 minutes, until golden
Allow to cool before removing form the tray and before topping with decorative/icing sugar
