Strawberry Sauce

Ingredients
- 2 cups fresh strawberries quartered (top removed)
- 1/3 cup brown sugar or coconut sugar
- 1/3 cup + 2 tbsp water
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 tbsp cornstarch
Instructions

In a bowl, mix 2 tbs of water with 1 tbs of cornstarch and set aside.

In a saucepan over medium heat, add the strawberries, the sugar and the 1/3 cup of water. Cover and bring to a boil.

Add cornstarch mixture into the saucepan and cook until it thickens (approximately 4-5 minutes).

Remove from heat and add the lemon juice and the vanilla extract.

Serve warm over waffles or pancakes or put in the refrigerator for later use.
