Being vegan is getting easier and easier, especially when I compare with when I decided to follow that lifestyle 11 years ago. We now have tons of products available, to the point where it’s becoming hard to choose. But hey, I am definitely not complaining. However, buying everything “ready” at the supermarket can become costly… Especially when there are so many things you can easily make at home yourself.
This is one these easy recipes: cashew cream cheese. I know cashews are quite expensive, but I tend to load up when they’re on sale somewhere.
Is there a product that you try not to buy at the supermarket and instead make at home?
Vegan Cream Cheese
- 1 1/2 cups unsalted raw cashews soaked overnight
- 1/4 cup unsweetened non-dairy yogurt soy or coconut work best
- 1 tbsp fresh lemon juice
- 1 tbsp apple cider vinegar
- 1/2 tsp salted herbs
- 1 tbsp nutritional yeast
- 1 tbsp chives optional
Put all ingredients in a blender and blend until very smooth
Enjoy right away or keep in refrigerator for 3-4 days
