No-bake Cookies

Ingredients

  • 1 cup cashews
  • 1 cup almond meal
  • 1/4 cup chocolate chips
  • 5 fresh dates if dry, soak in warm water for 10 minutes
  • 1 tbsp maple sugar or sugar of your choice
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon powder
  • 1/4 tsp sea salt

Instructions

  1. In your food processor, combine all the ingredients until you get a cookie dough (don't over process or it will turn into a nut butter)
  2. Using your hands, shape into cookies of the shape and size of your preference.
  3. Put in the freezer for 30 minutes and keep in the refrigerator afterwards.
