Raspberry Granola Crumble

Ingredients

For the filling:

  • 3 cups raspberry
  • ¼ cup maple syrup
  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

For the crumb topping:

  • 3 cups granola I use Grandma Emily Original
  • 2 tbsp maple syrup
  • 1 tbs coconut oil melted
  • ¼ tsp salt

Instructions

  1. Preheat oven at 350 degrees F.
  2. In a saucepan, add all the filling ingredients and slowly bring to a boil. Simmer until the syrup thickens and the apples are tender.
  3. Remove from heat and set aside while preparing the crumb topping.

  4. In a food processor, combine all the crust ingredients until sticky and crumbly.
  5. In a 9×6 inches oven dish, spread the apple filling evenly.
  6. Top with the crumb topping.
  7. Put in the oven and bake for 18-20 minutes, until the top is browning slightly.
  8. Remove from oven and set aside to cool for 10-15 minutes.

Notes

It’s just as delicious cold. You can keep it in the refrigerator 2-3 days.
