Granola Fudge

Ingredients

  • 1/2 cup maple syrup
  • 1/4 cup tahini butter (or sunflower butter)
  • 1/4 cup peanut butter (or no nut butter)
  • 1/4 cup oat flour you can make it yourself (see below)
  • 2 cups granola
  • 1 pinch salt

Instructions

  1. Combine maple syrup, tahini and peanut butter in a medium size bowl

  2. Add in the oat flour and salt and mix again until well combines

  3. Add the remaining ingredients and stir well, until the granola is all coated. If your mixture is too liquid (it really depends on the nut butter you use), add a bit more granola and oat flour. It should be sticky and soft but not liquid

  4. Line a 6x9 oven dish with parchment paper and firmly press the granola mixture in

  5. Place in freezer and let it cool for at least 1 hour before eating. Keep in freezer and enjoy whenever you want!

Notes

Making your own oat flower is very easy: simply blend the oats in a blender for 30-60 seconds, until you get a very fine texture.
