Pumpkin French Toasts

  • 1 1/2 cups oat milk
  • 3 tbs almond flour
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tsp pumpkin spice can be replaced by 1/2 tsp cinnamon and 1/2 tsp nutmeg
  • 1 tsp pumpkin puree
  • 6 slices of bread
  • Vegan butter for cooking


  1. Mix all the ingredients, except the bread and the butter, in a bowl. Mix well and refrigerate for 30 minutes. If you want it to go quicker, place in freezer for 10-15 minutes
  2. Slice each slice of bread into 4 slices (sticks)
  3. While warming a pan over medium heat with 2-3 tbs of vegan butter, quickly dip each "stick" of bread in the batter. Do not soak them
  4. Place the sticks in the now warm pan and cook 3-4 minutes on each side, until golden and crispy
  5. Serve immediately with the topping of your choice


**The batter can be kept in the refrigerator 2-3 days.
